Buttered Rum Smoothie

The basis for this smoothie recipe is the great tasting butterscotch ice cream that can be frozen for a month or kept in your refrigerator for up to one week. If this smoothie recipe proves to be popular, make larger quantities for parties and such.

Smoothie tip: Serve this buttered rum smoothie immediately else the ice cream will simply disappear.

Buttered Rum Smoothie Recipe

Servings: 8

Ingredients

  • 3 tbsp. of rum per serving
  • 1 cup vanilla ice cream; slightly softened
  • 1 cup brown sugar
  • 1/2 cup butter
  • boiling water
  • nutmeg of powered cinnamon; to decorate

Instructions

Place the brown sugar and butter in a pan and cook over low heat until the butter and sugar have melted. Combine the sugar mixture with the ice cream in a mixer or smoothie blender and process until smooth. Place in your refrigerator until cooled, or freeze.

Place 1 scoop of frozen mixture or 1/4 cup chilled mixture in a cup with 3 tablespoons of rum. Fill with boiling water, stir and sprinkle with grated nutmeg of cinnamon powder.
